Cooking for the Holidays: an Easy Pumpkin Cake Recipe

If your family is anything like ours, the rest of our 2013 will most likely be filled with food and family galore. For many, this can be a time of stress as we rush to get everything in order and finished by the time family starts to ring our doorbell for dinner. For today’s post, we have a solution for any family gathering that is sure to please the attendee and hosts alike. If you have yellow cake mix, pumpkin pie filling and 20 minutes of bake time on your hands, give this easy, easy pumpkin cake a try this holiday season!

Step one: Mix one can (15 oz) of pumpkin pie filling in with your cake mix.
Step two: Pour into cupcake tins or bake as a cake at 350 degrees for 20-25 minutes. That’s right, two ingredients. No eggs, water, oil, nothing.
Step three: Ice with cream cheese frosting (store bought, in my case, but feel free to get fancy with your own recipe!), or sprinkle some powered sugar on top.
Step four is to serve, and enjoy your time with friends and family over a delicious slice of cake!
