National Creamsicle Day

August 14, 2012 Activities, Celebrations, Cooking, Events, Recipes 118 Comments

Usually our Tuesday posts are dedicated to a Tip Tuesday but since today is National Creamsicle Day, our tip is to enjoy this last bit of summer making a tasty treat with your kids!

What you need:

  1. 2 cups orange juice
  2. Up to 1/3 cup honey
  3. 4 egg yolks
  4. 2 cups fresh cream
  5. 2 cups fresh whole milk
  6. 4 to 6 drops organic sweet orange essential oil (or 1/4 tsp orange extract)
  7. 1 tsp vanilla extract

Instructions

  1. Stir 1/3 cup honey into 2 cups orange juice.
  2. Pour the mixture of juice and honey into a heavy-bottomed sauce pan and heat it over a medium flame until reduced by half.
  3. Once the mixture of honey and orange juice has been reduced by half to viscous syrup, remove it from the heat and allow it to cool to room temperature.
  4. Whisk four egg yolks, two cups fresh cream and two cups fresh whole milk with organic sweet orange essential oil or orange extract and one teaspoon vanilla extract. Continue whisking until all the ingredients are very well combined.
  5. Whisk the mixture of honey and orange juice into the mixture of eggs, cream and milk.
  6. Pour the Creamsicle mixture into your Popsicle molds and freeze until solid, at least twelve hours.
  7. Enjoy!

*If you are concerned about using raw eggs, you can also try the recipe without them, but there will be a bit of a different texture.

Growing up with 9 kids, we didn’t get much in the way of treats. But I do remember my mom buying these store bought DreamSicles when were were little. Sitting on the back porch and licking them as fast as we could so they didn’t melt and waste even one bit of that sweetness. I would for sure try this recipe and file it away for my daughter to use for day care kids when they are a bit older. Next summer should be about right! Thanks for the post!

Oh, this looks like a winner! I will certainly NOT be using wooden popsicle sticks, as they give me the heebie-jeebies. But plastic will work just fine. Score!

Thank you for the recipe! I just bought popsicle molds on clearance at the dollar store. I’m tired of giving my kids HFCS and artificial colors, and they do love their popsicles. I’m just doing juice popsicles now, but want to try some frozen yogurt and other varieties.

That sounds awesome! I wonder, is this safe for babies to have a taste – if you heat the honey does that make it OK to feed to an under-one-year-old? Anyone know?
